Spicy Thai Wings
Ingredients:
Chicken:
500g Chicken wings
2 cups Corn/potato starch (flour)
Oil for frying (vegetable or any neutral flavor oil)
3 cloves Garlic
Marinade:
1 tbsp Soy sauce
1 tsp Sugar
½ tsp Baking soda
½ tsp Black pepper
Wing Sauce:
3 tbsp Hot chili sauce/Sriracha sauce
2 tbsp Honey
1 tbsp Lemon juice
1 tsp Soy sauce
Garnish:
2-3 slices Kaffir lime leaves (optional)
Instructions:
1️⃣ Put chicken wings in a large bowl, add all the marinade ingredients, and mix well. Set aside for at least 30 minutes.
2️⃣ Roughly chop the garlic and set aside.
3️⃣ Mix all the wing sauce ingredients in a bowl and set aside.
4️⃣ In a large tray, coat each chicken wing well with corn/potato flour, shaking off the excess.
5️⃣ Heat the oil to 350°F. Deep fry the wings for 8-10 minutes until crispy golden brown. Transfer to a cooling rack or paper towel.
6️⃣ Heat a pan, drizzle 2 tsp of oil, add garlic, and stir for 1-2 minutes. Add the wing sauce mix, lower the heat, and stir for a few seconds.
7️⃣ Turn off the heat, add fried wings to the pan, and coat them well with the sauce.
8️⃣ Transfer to a serving plate and garnish with kaffir lime leaves if desired. Enjoy!
