Colombian Papas Chorreadas
Ingredients:
700 grams red potatoes (papa pastusa)
2 tablespoons sunflower oil
4 grated tomatoes
2 large green onions (scallions), finely chopped
1 clove of garlic, finely chopped
1 teaspoon cumin powder
50 grams shredded cheese (queso Paipa, mozzarella, or cheddar)
100 grams cream (about 1/2 cup)
Salt and pepper to taste
Instructions:
1️⃣ Cook Potatoes: Partially peel the potatoes, leaving some skin on. Halve them, wash, and cook in boiling water until soft (20-30 minutes). Drain the potatoes, reserving 1/2 to 1 cup of the cooking liquid. Keep the potatoes warm by covering them with a lid.
2️⃣ Prepare the Sauce: While the potatoes are cooking, heat 2 tablespoons of oil in a pan over medium heat. Cook the onion and garlic until soft (about 5 minutes). Add the cumin and grated tomatoes, then let the mixture simmer for 15-20 minutes. Stir in the cream, grated cheese, salt, and pepper, mixing well until the cheese melts. If needed, add the reserved potato cooking liquid to achieve a thinner consistency.
3️⃣ Combine and Serve: Mix the warm potatoes with the sauce, ensuring they are well-coated. Serve immediately.
