Sausage Stroganoff a la Margie
Ingredients:
1 tablespoon olive oil
6 beef sausages (or any preferred type)
4 slices turkey bacon, chopped
1 large brown onion, diced
2 garlic cloves, minced
250g mushrooms, sliced
1 teaspoon sweet paprika
1 tablespoon tomato paste
1 cup tomato sauce
1 teaspoon French mustard
1 teaspoon garlic salt
1 teaspoon cracked pepper
1 cup beef stock
1 cup sour cream
Fresh chives, chopped (for garnish)
Instructions:
Heat the olive oil in a large pan over medium heat. Add the sausages and cook until browned all over, then remove and set aside.
In the same pan, add the turkey bacon, onion, and garlic. Cook until the onion is soft and translucent.
Add the mushrooms and cook until they release their moisture and start to brown.
Stir in the paprika, tomato paste, tomato sauce, mustard, garlic salt, and cracked pepper. Cook for a couple of minutes until well combined.
Add the beef stock and return the sausages to the pan. Bring to a simmer and cook for 15 minutes, allowing the flavors to meld.
Reduce the heat and stir in the sour cream. Cook gently until heated through.
Garnish with fresh chives before serving.
