Mario Batali Chicken Scarpariello Recipe
Ingredients:
8 chicken thighs, bone-in and skin-on
1 pound sweet Italian sausage
1 onion, diced
3 cloves garlic, minced
1 cup chicken broth
1 can diced tomatoes
1/4 cup balsamic vinegar
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions:
Season the chicken thighs with salt and pepper.
In a large skillet, brown the sausage over medium-high heat. Remove and set aside.
Add the chicken to the skillet and brown on both sides. Remove and set aside with the sausage.
In the same skillet, cook the onion and garlic until the onion is translucent.
Add balsamic vinegar, stirring to scrape up browned bits, and cook until reduced by half.
Add chicken broth and diced tomatoes, then return sausage and chicken to the skillet. Simmer for 15 minutes until the chicken is cooked through.
Stir in chopped parsley and serve over pasta or rice.
