Lemony Chicken and Rice Skillet! 🍋🍗🍚
Zesty Lemony Chicken and Rice Skillet with Fresh Herbs
Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 cup water
Juice of 2 lemons
Zest of 1 lemon
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Directions:
Season the chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add minced garlic and sauté for about 1 minute until fragrant.
Stir in the rice and cook for 1-2 minutes until lightly toasted.
Pour in the chicken broth, water, lemon juice, and lemon zest. Stir in the dried oregano, dried thyme, and red pepper flakes if using.
Return the chicken breasts to the skillet, nestling them into the rice mixture.
Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
Remove from heat and let rest for a few minutes before serving. Garnish with chopped fresh parsley.
