Easy 20-Minutes Fish Stew
Ingredients:
2 tbsp olive oil
1 small white onion, chopped
2 cloves garlic, minced
1 1/2 lb wild cod, cut into chunks
15 oz can diced tomatoes
1/2 cup coconut milk
1/4 cup sour cream (optional)
2 tbsp tomato paste
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
Sea salt and ground black pepper, to taste
1/2 tsp red pepper flakes
1 tbsp fresh cilantro, chopped
Instructions:
Heat olive oil in a large skillet or cast iron pan over medium heat. Add chopped onion and minced garlic, cooking until fragrant and onions are translucent (about 3 minutes).
Stir in the diced tomatoes, coconut milk, sour cream (if using), and tomato paste. Cook the mixture for about 3 minutes.
Add the sliced bell peppers and cod chunks to the skillet. Season with salt, black pepper, and red pepper flakes. Cover the skillet and let the fish simmer for 10-12 minutes, flipping the cod chunks halfway through if they are not fully immersed in the broth.
Once the fish is cooked, garnish the stew with fresh cilantro. Serve immediately.
