Baked Feta Chicken

Ingredients:
1½ – 2 pounds boneless, skinless chicken breasts (4 chicken breasts)
2 teaspoons Italian seasoning
½ teaspoon chili powder
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons extra virgin olive oil
1 tablespoon minced garlic
½ cup chicken stock
2 tablespoons lemon juice
8 ounces block of feta cheese
1 pint grape tomatoes
5 – 6 fresh basil leaves, thinly sliced into ribbons

Instructions:
Preheat your oven to 350°F (175°C).
Combine Italian seasoning, chili powder, salt, and pepper in a small bowl. Rub this seasoning blend on both sides of the chicken breasts.
Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken breasts until browned on both sides, about 4-5 minutes per side.
Add minced garlic to the skillet and sauté until golden, about 1 minute.
Pour in chicken stock and lemon juice. Move the chicken to the skillet's edges and place the block of feta in the center. Add grape tomatoes around the feta. Spoon some liquid over the feta and tomatoes.
Bake in the oven for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes.
Remove chicken from the skillet. Stir feta and tomatoes into the sauce. Return chicken to the skillet and spoon sauce over it. Top with sliced basil before serving.
