Avocado Toast with Poached Eggs and Microgreens

🌟 Avocado Toast with Poached Eggs and Microgreens 🌟

Ingredients:

4 slices of whole-grain bread
2 ripe avocados
1 tablespoon fresh lemon juice
Salt and pepper to taste
4 large eggs
1 tablespoon white vinegar
1/2 cup microgreens
Red pepper flakes (optional, for garnish)
Directions:

1️⃣ Prepare the Avocado Spread:
In a medium bowl, mash the avocados with a fork. Add the fresh lemon juice, salt, and pepper, and mix until well combined.

2️⃣ Toast the Bread:
Toast the slices of whole-grain bread until golden brown and crispy.

3️⃣ Poach the Eggs:
Fill a medium saucepan with water and bring it to a gentle simmer. Add the white vinegar to the water. Crack each egg into a small bowl or ramekin. Create a gentle whirlpool in the water by stirring with a spoon, then carefully slide each egg into the water. Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny. Remove the eggs with a slotted spoon and drain on paper towels.

4️⃣ Assemble the Avocado Toast:
Spread a generous amount of the mashed avocado mixture onto each slice of toasted bread. Top each with a poached egg.

5️⃣ Garnish and Serve:
Sprinkle the microgreens over the top of the poached eggs. Add a pinch of red pepper flakes if desired for a bit of heat. Serve immediately.
