Apricot Chicken
Ingredients:
For the chicken:
4 boneless, skinless chicken breasts
1 cup apricot preserves
1 packet of dry onion soup mix
1 tablespoon soy sauce
1 tablespoon Dijon mustard
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then brown them on both sides. Transfer the chicken to a baking dish.
In a bowl, mix apricot preserves, dry onion soup mix, soy sauce, and Dijon mustard until well combined.
Pour the apricot mixture over the chicken breasts, ensuring they are evenly coated.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbling.
Serve the chicken with the apricot sauce spooned over the top.
